Ahh, the fabled Chinese Burger! This is the first food you should think about trying when visiting Xian. Often labeled as the world’s first burger, Roujiamo was first made about 2500 years ago. Handmade bread is crispy on the outside and soft inside and stuffed with tender fatty pork that has stewed for hours (in fact, some local shops claim it has been stewing for decades!). This is by far our personal favorite! You’ll know you are in the right place when you see a small coal-fueled stove next to the kitchen door where you can watch them make and bake the bread by hand. This is simply the best Chinese Burger bread you can find anywhere in China. They also say the burner under their succulent stewed pork hasn’t been turned off in decades- so they’re rolling out a flavor you can’t find anywhere else.

“Super central” and “super popular” defines this Chinese burger shop that’s been open since the 70s. This is a Xian equivalent to an old American diner: dated, straight forward, and delicious. You’ll notice a line throughout the day, but it moves fast and means you know your food is hot and fresh. Order just inside the door and then follow the queue along the counter to pick up your food. It’s still one of the best local burgers you can get!

This is a popular local favorite and it is said to be one of the oldest restaurants within the city wall. You’ll know when you are close when you see a queue of people waiting. Regular customers are often welcomed with a unique temper; the first time we visited we arrived 5 minutes too late. Although people were still eating, they told us to come back the earlier next day- so plan ahead!
